Champagne Brut Reserve - Bereche et Fils
The Champagne Brut Reserve of Bérêche et Fils is a wine of great character, vibrant, of great complexity. It is a cuvée made up of Pinot Noir, Chardonnay and Pinot Meunier. The grapes come from old vineyards located both in the Vallèe de la Marne and in the Montagne de Reims. The vinification takes place partly in wood and partly in steel and, after a few months of aging on the lees, the assembly of the bases is created to which 35% of reserve wine from previous thousandths is added. The second fermentation takes place in the bottle with rest on the lees for at least 24 months before disgorgement.

We taste it t a temperature of 8/10° in baloon flute.
Pairings
Champagne from all over the meal, from a starter to a second of fish, to try with stuffed candies of tomato sauce.
Cellar: Bereche et Filst
The Maison Bérêche et Fils was founded in 1847 by Lèon and Albert, and is located in Ludes, in the heart of the Montagne de Reims. Today we have reached the fifth generation with the brothers Raphael and Vincent who, together with 10 faithful collaborators, carry on a long tradition made of passion, sacrifices and hard work to always produce great wines. The vineyards, about 7 hectares in total, are located in the Premier Cru of Ludes and Ormes, in the Montagne de Reims, while others extend in parcels along the Vallée de la Marne. The vines are cultivated with a biodynamic approach, and the use of herbicides, insecticides and pesticides against mold has been completely banned among the rows. All the work in the vineyard is done by hand, from the winter pruning to the harvest, in order to give the utmost attention to each individual plant. Even in the cellar we try to work in the most traditional way possible, avoiding filtrations and favoring slow and spontaneous fermentations, using oak barrels during the vinification phase and preferring long stops on the lies. The Champagnes of Bérêche et Fils are produced with attention and sensitivity, following and carrying forward the ancestral methods handed down from father to son.
