The Champagne Brut "Platine" by Nicolas Maillart is composed of a cuvée where pinot noir is dominant, with a complement of chardonnay and pinot meunier. The high percentage of reserve wines, from 30 to 40% which are aged in barrels, gives great regularity and style, richness and natural freshness. After aging in the bottle for at least two years, disgorgement is done by hand, at least three months before sale.

Cellar: Nicolas Maillart
The history of the Maillart family dates back to 1753, when they began cultivating vines in the nearby village of Chamery. Today with Nicolas we have reached the ninth generation. After completing his studies in engineering and oenology, he returns home in 2023 to manage the family business. From the outset, it was committed to practicing sustainable production and viticulture, and after a long ecological-environmental approach, the Maillart maison was certified as HVE (High Environmental Value). The company owns only Premier and Grand Cru vineyards on the hills of Reims and the vineyards are mostly planted with Pinot Noir, with the remainder raised in Chardonnay and Pinot meunier. In the cellar, the vinification and maturation are carried out both in steel tanks and in wooden barrels, depending on the origin of the grapes. The "reserve" wines are also partially aged in cask to increase their complexity. When the time comes to create the cuvee, having a wide variety of wines to choose from, there is the possibility of creating Champagnes of a constant quality, while also being able to keep those that are very original and particularly expressive, i.e. the best "millesimati".
