Franck Pascal's "Fluence" is a champagne d'assemblage with Pinot Meunier, Pinot noir and Cahrdonnay. The grapes come from vineyards bred in biodynamics and, after harvesting, ferment thanks to indigenous yeasts; it then continues with the creation of the final cuvée and refermentation in the bottle, where the Champagne remains to mature on the lees for at least 24 months before disgorgement. A Champagne of great liveliness, gustatory balance, with a fresh sip that makes the drink really smooth.
Service
We recommend tasting it at a temperature of 8/10 ° in a balloon flute. Wine to be drunk immediately but will express its best in a few years.

Champagne for the whole meal, from an appetizer to a fish main course, to be tried with candies stuffed with tomato branziono.

CFranck Pascal is a vigneron, an engineer by training, who after the death of his brother took over the reins of the family business, founded in 1906, gradually converting it to biodynamic cultivation, until receiving the certification in 2004. The cultivation of the vines is carried out with experimental methods which, year after year, try to best adapt to the needs and which involve the use of essential oils and chamomile infusions to nourish the plants. There are 4 hectares of vineyards, planted for 70% with pinot meunier, 27% with pinot noir and the remaining 3% with chardonnay. The parcels of vineyards are distributed among seven municipalities in the Vallèe de la Marne, which belong to the Baslieux-sous-Châtillon cellar, where in the cellar Franck minimizes the use of wood, so as to enhance terroir and varietal, prefers fermentation spontaneous with indigenous yeasts, it makes very little use of sulfur dioxide and does not decant or filter. The names of his Champagnes recall the principles of naturalness, authenticity, balance that inspire Franck. The label always contains information on the vines, the dosage and the date of disgorgement. Unique, original, elegant champagnes with a strong personality, respectful of natural values, expression of a strongly suited territory.
