The B.11 cuvée is made from 100% Pinot Noir grapes from the 2017 harvest from the Chervey cru. One year of aging 50% in neutral oak barrels, and 50% in steel tanks. It is rosé Champagne with a predominantly fruity, citrus and mineral aromatic profile. The sip is fresh and dynamic, but very soft. A fine example of Rosé de Saignée, elegant and pleasant to drink.

Service

The cellar: Charles Dufour
Charles Dufour is a young winemaker and winemaker who cultivates 6 certified organic hectares in Landreville, in the Côtes des Bars region of the Aube department. Coming from a family immersed in the wine tradition of this off the beaten path of a Champagne region, some of the vineyards were planted by his grandfather and are quite old. Charles prefers to work with natural yeasts for the fermentations of his wines and the wines are free of added sulfur. Charles was interested in using the Pinot Blanc in his cuvées, with this vine that is found significantly in its Bulles de Comptoir bottling. Recently it has bottled a single varietal Pinot Blanc from a single vineyard, Le Champs du Clos. The dosage is extremely low, sometimes only 2 g / liter. Liqueur de tirage is a blend of wine and cane sugar and the yeasts used in secondary fermentation come from its own vineyards. None of his wines has ever been fined or filtered.
