Coteaux Champenois Blanc "Vin de Comptoir" is one of the few still white wines found in Champagne. Not an easy thing to do at these latitudes, but Charles Dufour did it by giving us this jewel produced with Pinot Blanc, Chardonnay and Pinot noir, with vinification and aging in barrique. On the nose the beginning is slightly reduced, on the spices and on the oak, slightly sulphurous, but immediately greedy, between ginger and a bouquet of spices. In the mouth it is light and very graceful, has strength and finesse, with a very elegant acidity. Lemon balm and lemongrass, for a great aromatic feedback in the retro-olfaction. It stretches in a subtle and delicate way, and then expresses a touch of bitter salinity in the finish, on a brushstroke of anise..
Service
It is recommended to serve it at a temperature of 8/10 ° in tulip glasses. Wine to drink immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.

The cellar: Charles Dufour
Charles Dufour is a young winemaker and winemaker who cultivates 6 certified organic hectares in Landreville, in the Côtes des Bars region of the Aube department. Coming from a family immersed in the wine tradition of this off the beaten path of a Champagne region, some of the vineyards were planted by his grandfather and are quite old. Charles prefers to work with natural yeasts for the fermentations of his wines and the wines are free of added sulfur. Charles was interested in using the Pinot Blanc in his cuvées, with this vine that is found significantly in its Bulles de Comptoir bottling. Recently it has bottled a single varietal Pinot Blanc from a single vineyard, Le Champs du Clos. The dosage is extremely low, sometimes only 2 g / liter. Liqueur de tirage is a blend of wine and cane sugar and the yeasts used in secondary fermentation come from its own vineyards. None of his wines has ever been fined or filtered.
