"Otobbor" is a fragrant and drinkable sparkling red wine that comes from Barbera grapes. It is ruby red with a nice generous froth. The nose is fragrant and vinous, and expresses aromas of red berry fruit. On the palate it is juicy, fresh, exuberant, very drinkable.

Otobbor - Crocizia
Otobbor is a sparkling red wine that comes from Barbera grapes. The grapes come from vineyards cultivated in strict biological regime, we do not use chemical products but only copper and sulfur, in order to have healthy and genuine grapes. During the harvest the grapes are harvested by hand and de-stemmed in an open vat. The fermentation takes place without adding yeasts and without controlling the temperature with about 15 days of maceration in a steel tank. The wine is never clarified or stabilized, knows only periodic transfers until spring. It is bottled without filtration and spontaneously reports the remaining sugars in the bottle, without the addition of selected yeasts. Otobbor is a ruby-red bone with a nice generous froth. The nose is fragrant and vinous, and expresses aromas of red berry fruit. At the sip it is juicy, fresh, exuberant, very drinkable.
Service
We taste it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Ideal to combine with rich dishes of the Parma tradition. On all, with great pumpkin ravioli.
Cellar: Crocizia
The Crocizia cellar is a small winery located in Pastorello, on the Parma hills at 500 meters above sea level. The company was founded in the early 2000s by the will of Marco, Sara and Aurelio Rizzardi, when they decided to recover an old farmhouse and cultivate the classic vines of the Parma tradition; Malvasia di Candia for white wines and Barbera, Lambrusco Maestri, Pinot Nero and Croatina for reds. The vineyards, which are found on calcareous soils with outcropping marne, are cultivated in rigorous biological regime, we do not use chemical products but only copper and sulfur, in order to have healthy and genuine grapes. The same philosophy is followed in the cellar: no additives, fining agents, and stabilizers are used, but spontaneous fermentations with indigenous yeast yeasts, steel refining and no filtration before bottling. All wines, apart from the Pasènsja, are sparkling, and they prove to be frank, lively, fresh, fun, with a tasty profile.
