Marc`Aurelio - Crocizia
Marc`Aurelio is a sparkling red wine obtained from Lambrusco Maestri grapes. The grapes come from vineyards of 20 years of age that are located at 500m. The vineyards are cultivated in strict biological regime, we do not use chemical products but only copper and sulfur, in order to have healthy and genuine grapes. The harvest takes place in mid-September. Spontaneous vinification with a 10-day maceration on the skins. It is refined in steel for about 5 months. Bottled without filtration, spontaneously refer to the remaining sugars in the bottle. Marc`Aurelio presents a purplish red color with a nice persistent mousse. The nose tastes of red berry fruit such as cherry and blackberry, followed by more earthy and vegetal hints. At the sip it is exuberant, with a nice minerality, freshness and flavor.
Service
We taste it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Ideal as an aperitif, with pasta dishes based on fish and vegetables, to try with a stewed monkfish.
Cellar: Crocizia
The Crocizia cellar is a small winery located in Pastorello, on the Parma hills at 500 meters above sea level. The company was founded in the early 2000s by the will of Marco, Sara and Aurelio Rizzardi, when they decided to recover an old farmhouse and cultivate the classic vines of the Parma tradition; Malvasia di Candia for white wines and Barbera, Lambrusco Maestri, Pinot Nero and Croatina for reds. The vineyards, which are found on calcareous soils with outcropping marne, are cultivated in rigorous biological regime, we do not use chemical products but only copper and sulfur, in order to have healthy and genuine grapes. The same philosophy is followed in the cellar: no additives, fining agents, and stabilizers are used, but spontaneous fermentations with indigenous yeast yeasts, steel refining and no filtration before bottling. All wines, apart from the Pasènsja, are sparkling, and they prove to be frank, lively, fresh, fun, with a tasty profile.
