Besiosa - Crocizia
"Besiosa" by Crocizia is a sparkling wine based on local white grapes which is naturally fermented in the bottle. The grapes come from vineyards grown at 500 meters above sea level, surrounded by orchards and woods. The harvest is manual, and in the cellar fermentation takes place spontaneously in steel tanks with maceration on the skins that lasts about 10 days. It is bottled with a slight residual sugar so that, when hot weather arrives, the refermentation restarts, with giving the much appreciated bubbles. The "Besiosa" has an orange color due to the maceration on the skins. The nose has hints of citrus fruits, oranges and lemons, flavored with notes of peach and hints of bread crust. On the palate it is juicy, slightly aromatic with a slight tannin. An absolute thirst-quenching and drinkable wine.
Service
We taste it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Ideal as an aperitif, with pasta dishes based on fish and vegetables, to try with a stewed monkfish.
Cellar: Crocizia
The Crocizia cellar is a small winery located in Pastorello, on the Parma hills at 500 meters above sea level. The company was founded in the early 2000s by the will of Marco, Sara and Aurelio Rizzardi, when they decided to recover an old farmhouse and cultivate the classic vines of the Parma tradition; Malvasia di Candia for white wines and Barbera, Lambrusco Maestri, Pinot Nero and Croatina for reds. The vineyards, which are found on calcareous soils with outcropping marne, are cultivated in rigorous biological regime, we do not use chemical products but only copper and sulfur, in order to have healthy and genuine grapes. The same philosophy is followed in the cellar: no additives, fining agents, and stabilizers are used, but spontaneous fermentations with indigenous yeast yeasts, steel refining and no filtration before bottling. All wines, apart from the Pasènsja, are sparkling, and they prove to be frank, lively, fresh, fun, with a tasty profile.
