Volpe Rosa is the rosé from Cantina Giardino which is made from Coda di Volpe Rossa grapes, an ancient and rare Campania grape variety. 2 days maceration and one year aging in chestnut barrels. It has a copper color with small orange shades. Intense nose sensations of dried flowers with notes of candied fruit and caramelized notes. In the mouth it is dry with an excellent acid texture with a pleasant and invigorating finish. Only 400 bottles produced.

Volpe Rosa - Cantina Giardino
Rosé of Cantina Giardino is obtained from red tail tail grapes, an ancient and rare Campanian vine that was planted in the middle of the rows of Aglianico. Fermentation is spontaneous with yeasts alone and undergoes maceration of 2 days. One-year aging in chestnut barrels and then 6 months in bottle before placing on the market. The Volpe Rosa has copper color with small orange nuances. The intense nose of flowers blossomed with notes of candied fruit and caramelized notes. In the mouth is dry with a good acid texture with a pleasant and corroborating finish. Only 400 bottles produced.
Service
It is advisable to taste it at a temperature of 14/16 ° in tulip goblets. Wine to drink at once but that will give you the best of it in a few years.
Pairing
The Volpe Rosa is great with starters, seafood seconds, to try with a salad of marmalades and mussels.
Cellar: Cantina Giardino
Founded in 1997, with real wine vinification garage owners that made in their garage in 2003 by Antonio and his wife Daniela Gruttola manage to buy a private cellar in Ariano Irpino nell'avellinese. Today Cantina Giardino has about seven hectares of vineyards all conducted in organic viticulture and vineyards that reach up to 100 years. All are located in various municipalities of the province of Avellino, and each has different microclimates and terroir. Maximum care is taken in the vineyard where chemical treatments are abolished, and the same care is taken in the cellar, where the fermentations are spontaneous with only indigenous yeasts, maceration on the skins are more or less long and refinements are made in chestnut barrels or oak and amphorae. The vineyards are all native, Fiano, Greek, Foxtail and Aglianico, which make up the nine company labels. Wines produced as naturally as possible to reflect the genuine soul of the land.
