Bonarda "Ipazia" - Andrea Picchioni
Bonarda Ipazia is a red wine produced from pure Croatina grapes. The grapes come from vines that are found on sandy-pebbly soils. After the manual harvest, the grapes are pressed and de-stemmed. The must thus obtained is left to macerate in steel and cement tanks for 4-5 days, then it is drawn off and put in autoclave with cane sugar and indigenous yeasts for the refermentation. After bottling, the bottles rest for a short time lying in the dark before being put on the market. The winery of Andrea Picchioni is located in Canneto Pavese, in the province of Pavia, a place that has always been famous for its strong vocation for the production of high quality red wines. The history of the company began in 1988, when Andrea Picchioni decided to recover eight hectares of old vineyards in Val Solinga, located on a hillside, which turns at noon, with slopes in some prohibitive sections. In 1995 he began his collaboration with the oenologist Giuseppe Zatti, which proved to be a precious resource in improving the quality of wines. Andrea begins his adventure with the sole objective of cultivating his vines and produces his wine with the utmost respect for the environment. In the vineyard, to irrigate its plants it uses only well water from its own wells, using only organic fertilizers and redistributing the pomace, mowing the grass leaving it on the ground and does not carry out any work to avoid erosion. The types bred are the classics of Oltrepò such as Barbera, Vespolina, Croatina and Pinot Noir that are used to produce its wines, from Bonarda to Buttafuoco passing through a wonderful rosé bubbles.
