Service
We taste "Nebbia in Valle" to a temperature of around 16/18 ° C. It is recommended to open it a few minutes before serving and serve in large ballon glasses. Wine to be drunk immediately but if left to rest in the cellar for a few years can give great emotions. These natural wines are not stabilized and need to be stored at appropriate temperatures which can be guaranteed by a winery or a wine cellar apartment, so as not to compromise its durability.
Pairings
Nebbia in Valle is ideal with pasta dishes with meat sauce, roasted meats to try with the classic pizzoccheri of Valtellina.
Cellar: Dossi Retici
Bruno Credaro in 2000 creates the Company Dossi Retici. His goal is to cultivate the land in the least invasive way possible to produce a product with unbreakable bond with the earth from which it was born: why, from vineyards planted by the old masters in the twenties, has replaced the poles and the plants died because lives, in contrast to most of the plant species, more older the better the quality of the wine. The southern side of the Alps of Valtellina can be defined a niche of warm microclimate in an alpine environment, which allows the cultivation of the vine late varieties such as Nebbiolo and other local (Rossola, marzemino and other). Here a synergy between climate components and diverse land push the screw to the limit, lengthening the growing season and getting the best in quality.
