TDomaine Naïma & David Didon is located in Chassey-le-Camp, in the Côte Challonaise. The Domaine is the dream come true of David and Naïma Didon, husband and wife, who in 2017 took over an old farm surrounded by a 2 hectare vineyard, cultivated biodynamically. Here, among clay-limestone soils, 'Vignes Blanches', a so-called historic place of Bouzeron, comes to life. This small AOC is the stage for Pinot Noir, Aligoté and Pinot Blanc planted between 1947 and 1960. David is an experienced winemaker, having spent over a decade consulting with Etienne de Montille at Volnay, as well as spending time in the cellar and in the fields with friends Julien Altaber and Dominique Derain. In the vineyard David plows on horseback or works manually to minimize the use of machinery, and uses biodynamic preparations "to give information to the vines"; and to add a “cosmic force” to the earth. Naturally the cellar methods are equally delicate and minimally invasive: spontaneous fermentations carried out only by indigenous yeasts, refinements without decanting, bottling after very light and mild filtration. The wines of Domaine Naïma & David Didon are pure and crystalline and the future is particularly bright for David.
