Merlot - Doi Mats
Doi Mats Merlot is a full-bodied and elegant red wine based on the grapes of the same name which come from the Buttrio vineyard, in the Colli Orientali del Friuli. Fourteen-day maceration and ten-day fermentation in steel vats. Maturation in amphorae and first and second use French oak barriques for eighteen months. Eight month rest in stainless steel. An intense and broad wine. Fresh red fruit such as plum and blackberry. Followed by fig and spices such as black pepper, cloves, cinnamon and green cardamom. In the mouth it is dry, warm and soft. It envelops us in its roundness. The freshness is accompanied by a silky tannic texture. The serpentine salivation highlights a wine with excellent body. Long persistence, finesse and great balance.
Service
We taste Merlot at a temperature of 16/18 ° in Tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Doi Mats is a young winery that was founded in 2018 and is located in Ipplis south of Cividale, in the heart of the Colli Orientali del Friuli area, a few kilometers from the border with the Slovenian Brda. The winery was born from an idea by Enrico De Candido, who after having had various experiences around the world: Australia, New Zealand, California, passing through some Italian wineries and managing a small organic company, decided to stop in Friuli. Today Enrico manages 2 vineyards with extreme care; that of Buttrio, where Merlot reaches its best expressions, and the Poianis vineyard, where Friulano lives in synergy with the cohesion of the natural elements. 3 wines produced with a production of around 4000 bottles which are always unobtainable.
