Ideal to accompany salami appetizers, first courses, excellent with a duck breast.
Winery: Domaine Maryse Chatelin
Domaine Maryse Chatelin is located in Uchizy, a small French municipality located north of Macon, in Burgundy. The Domaine is led by spouses Maryse Chatelain and Alexandre Jouveaux who moved from Paris to Burgundy in the early 1990s. In 1999 they began cultivating their first plot by combining Alexandre's work in the domaine with that of a teacher at the local oenology school. From the beginning they have embraced a philosophy of minimal intervention in the vineyard and environmental sustainability. The harvest is manual and in the cellar the grapes are pressed with a manual press without any addition of chemical substances, the wines refine every year in the same barrels, because Alexandre believes that the yeasts and bacteria are in symbiosis with the grapes from the vineyards. All wines are bottled without sulfur and the total production is approximately 5,000 bottles.
