Paulette by Domaine de la Chappe is a sirah-based red wine that proves powerful, complex and profound, with a pleasant freshness. After carbonic maceration for 10 days and fermentation in truncated cone vats, refinement takes place in 40Hl wooden barrels. To share with someone with an unbridled passion for wine is that they love tasting new things together.

Service

It is recommended to taste it at a temperature of 16/18 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

A wine for the whole meal, from pasta with tomato sauce to escalopes with mushrooms, to try with a Fassona tartare.

Winery: Domaine de la Chappe

Domaine de la Chappe is located in Tonnerre, a small town near Auxerre, in Northern Burgundy. A new area from all points of view, just think that AOC Tonnerre was only created in 2006 and is certainly less known than nearby Chablis. The Domaine is now managed by Vincent Thomas who took over from his father who, together with his wife, took care of the cultivation of wheat and worked a few hectares of vineyards in a conventional way. Vincent continues to grow cereals, but above all he has transformed the vineyards he owns, approximately 2.5 hectares in total, into organic. In his vineyards we find Aligoté and Chardonnay and he often buys grapes from other natural winemakers in the Chablis, Petit Chablis and Beaujolais areas. In the cellar, Vincent works with a "hands-free" approach, avoiding any form of intervention. This is reflected in his wines, which are characterized by great freshness, roundness and floral notes, which have gathered followers from the world that loves organic products and which have particular and not exactly common labels.
