Service
We taste it at a temperature around 16/18°C. It is recommended to serve it in tulip glasses. Wine to be drunk immediately but if left to rest for a few years in the cellar it can give great emotions.

Fabrizio Niccolaini, after having spent more than 20 years producing wine with the Massa Vecchia company, decides, together with his wife Partizia Bartolini, to restore an old farmhouse and found Podere Aia Vecchia, a very small company located in the municipality of Massa Marittima . Here there is a small Pinot Noir vineyard planted on limestone soil, in the middle of the woods of the Colline Metallifere, and around 8ha of pastures and mowing meadows, which feed Jersey breed dairy cows. The milk is transformed by Patrizia in the small company dairy, producing two types of raw milk cheese without the use of additives and selected ferments. To maximize the delicacy of Pinot Noir, Fabrizio creates limestone containers to keep the wine outdoors for maceration and uses 60-litre glass demijohns for aging instead of wooden barrels. Every year it produces around 600 bottles, unmissable for fans of the genre!
