Amarone della Valpolicella Classico DOCG - Corte Bravi
Corte Bravi's Amarone Valpolicella Classico is produced with a typical blend of Corvinone, Corvina, Molinara and Rondinella. The grapes are harvested by hand, already selected from the plant to be placed in wooden boxes to dry for 3 months. Once pressed, they are left to cold macerate for ten days and then a spontaneous fermentation is started. Subsequently, a second hot maceration is carried out in order to extract the essence of these grapes to the maximum. Left to rest for 3 years in French oak barrels, it is then bottled without any filtration, to then continue its refinement in the bottle for at least a year. Ruby red color with garnet reflections, dried plums and cherries in alcohol emerge on the nose, wrapped in the scent of spices and notes of chocolate. In the mouth it is persistent, intense, enveloping, with a soft and elegant tannin.
Service
We taste it at a temperature of 18/20 ° in large ballon glasses. Wine to be drunk immediately but will express its best in a few years.
Pairing
Excellent wine to combine with elaborate first courses, red meat, game and very aged cheeses.
Cellar: Corte Bravi
The Corte Barvi company is Andrea and Ivano Brunelli, two brothers who have always produced refined grapes that give life to the main wines of the area in the heart of Valpolicella: Amarone and Recioto. Corte Bravi wines were born in 2011 in a small valley between Lake Garda (west), the mountains of Lessinia (north) and Verona (south). Organic fertilizers or green manure, copper and sulfur with the essence of orange flowers and small butterflies help the berries to make the most of their potential without stressing the plant. All to obtain honest and sincere wines in reflecting the virtues and merits of the territory they represent. Their wines are made with spontaneous fermentation on their indigenous yeasts without the use of chemical additives, thus obtaining low or free sulfur levels. Their philosophy? GRAPES AND NOTHING ELSE!
