We suggest to taste it at a temperature of 16/18° in baloon flute. Wine to be drunk immediately but also that expresses its best in a few years and it is advisable to keep it in a horizontal position in a cool, damp and dark cellar.

Wine is perfect for the whole meal, meat seconds to try with lasagna.
Cellar: Philipe Bornard
Philippe Bornard is a singular character and one of the most exciting natural winemakers of the Jura. He is said to be a purist, a rigorous supporter of the naturalness of the vineyard and of the surroundings, a winemaker who wants to dig into the minerality of the vineyard, because the salinity of the soil will flavor the freshness of the wine by attenuating its acidulous vehemence. He lives in Pupillin, a small French town of 265 inhabitants not far from Arbois and the Swiss border. He inherited his vineyards from his father, who previously sold grapes only to cooperatives. But it is the meeting with Pierre Overnoy, the legendary Arbois vigneron, who completely distorts Philippe's life, and from this meeting in 2005, Philippe decides to start producing his wine in a natural way. Today it cultivates 11 hectares of thirty-year-old vines in an exclusively biodynamic way, which are found at high altitudes, on calcareous and clay soils, divided into different plots that allow Philippe to produce a wide range of wines with different specific characteristics, able to satisfy all taste buds. All its wines are produced with a long and slow maceration in fiberglass, then they are transferred to larger oak barrels for aging, which lasts about a year. The wines have two denominations: Côtes du Jura and Arbois-Pupillin, and beautifully reflect the terroir of the Jura. The acidity and the mineral tension of the whites allow us to forget them in the cellar and find them again in a few years even more sparkling. The reds are light, elegant and extraordinarily gastronomic.
