Service
We recommend tasting it at a temperature of 16/18 ° in tulip glasses. Wine to be drunk immediately but left in the cellar a few years can give great emotions.
Pairing
It can also be drunk throughout the meal with dishes from the land kitchen, it is excellent with roast chicken.
Cellar: Daniele Piccinin
Daniele Piccinin's company is located in San Giovanni Ilarione, in the province of Verona, in the Lessinia area northeast of Verona. Daniele Piccinin begins as a restaurateur, in fact, after graduating in hotel management he opens a restaurant with a friend that focuses on non-traditional research cuisine. Here he takes care of the room and at the same time is passionate about wine, and begins to make a real course of study to improve his oenological knowledge. One day he drinks an Angelino Maule wine and is so impressed that he decides to go and find it. He still remembers the simplicity with which Maule said to him "He crushes grapes and becomes wine". 4-5 years of attendance begin which will lead him to sell his part of the restaurant and buy land around an old family home. Vineyards of Chardonnay and above all of Durella, an endangered grape that has existed in these parts for over a thousand years. The first wine was born in 2006 from a blend of Durella Chardonnay, and until 2009 it vinifies in the Maule cellar until, in 2010, it produces its wine in its own cellar. Daniele's approach in the vineyard is absolutely natural. In the rows grow mint, summer and winter cereals, plantain, shamrock, alfalfa and dwarf pea, and the use of copper and sulfur is limited in the most serious cases, all this to allow nature to be in harmony with itself is to yes, from its wine you drink the territory, as it is. Today Daniele produces 15000 bottles divided into 3 wines; . the Bianco Muni composed of Chardonnay and Durella, straight and frank with an irresistible sip, Montemagro, a selection of the best Durella grapes from 60-year-old vineyards and Arione, a classic method with a very fine bubble based on Durella.
