"RBL" Spumante Brut Nature - I Clivi
""RBL" dei I Clivi is an atypical sparkling wine. The second fermentation differs from the traditional charmat or classic methods as it takes place in the first fermentation. Towards the end of the fermentation, when the residual sugar is around 25 grams per litre, i.e. a quantity which, when dry, brings the pressure to 6/7 atmospheres, the tank is closed so that the CO2 released by the fermentation of the remaining sugar is trapped in wine. The wine is then left in the same tank to mature on the lees and after two months it is bottled at constant pressure. The sparkling wine made in this way maintains the primary aromas characteristic of the vine, all played on finesse and minerality.

Service
It is advisable to taste at a temperature of 8/10° in large tulip goblets. Wine to drink at once, but it holds very fine.
Pairing
Great with first fishy fish dishes, to try with some of the weasel filets wrapped in speck.
Cellar: I Clivi
The I Clivi company was born in Friuli between the Collio Goriziano and the Colli Orientali where, and the name comes from the gentle sunny slopes found in this area. The company was founded by Ferdinando Zanusso in the late 1990s, when he bought a small two-hectare vineyard with old vines on the southern slope of Monte Quarin. From the outset, the path of territoriality was taken, to let the terroir speak through the grapes. Today the winery is led by his son Mario, who cultivates twelve hectares of old vines under certified organic conditions, aged between sixty and over eighty years, where we find native vines such as Ribolla Gialla, Friulano, Verduzzo and Malvasia Istriana . The production areas are two distinct DOCs, Collio and Colli Orientali del Friuli, whose sensory difference is exclusively linked to the microclimate. Wines with a great personality.
