Jakot - Radikon
Jakot is an orange wine made from Friulano grapes. The grapes come from the area of Oslavia, an area renowned for its orange wines just a few steps away from Gorizia. After the harvest the grapes are destemmed and placed in oak vats where spontaneous fermentation takes place with only indigenous yeasts in contact with the skins, during fermentation the temperature is not controlled. To keep the skins always immersed, during maceration 3-4 manual punching operations are performed per day. Once the alcoholic fermentation is over, the vats are filled and closed and the Jakot remains in contact with the skins for 3/4 months. The refinement takes place in 25/35 hl oak barrels for about 40 months and frequent racking takes place during this time. It does not undergo clarification or filtration before bottling. Jakot is a wine with an orange-yellow color. The nose is intense with aromas of almond, tropical fruit, followed by spicy notes. In the mouth it is ample, of extraordinary complexity, balanced and fresh.
Service
We taste the Jakot to a 16/18 ° temperature in balloon glasses. Wine to be drunk immediately, but does not disdain to be aged. Recall that this wine should be served at the same temperature of red wine and should not be refrigerated.
