The Kai by Paraschos is a macerated white wine of great structure and personality obtained from grapes of Friulano in purity. Kai - Paraschos
The Kai is a macerated white wine of great structure and personality obtained from grapes of Friulano in purity. The grapes come from the Gradiscutta and Lucinico vineyards which have about 80, located on marly-clayey soils, called Ponka. After harvesting, the grapes are destemmed and fermented spontaneously with their skins in a large vat for a few days. It ages in large oak barrels on its lees for at least 24 months. Bottled in the fall without adding sulfur dioxide and without filtration. The Kai has an intense golden yellow color. At the Naso sensations of yellow fruit like peach and pineapple, balsamic and iodine notes. In the mouth it is of great structure, warm with a pleasant freshness. A great wine.
Service
It is advisable to taste at a temperature of 10/12 ° in tulip goblets. Wine to drink immediately but does not mind being aged a few years.
Pairing
Great with salami like raw ham or salami, pasta seasoned with vegetable sauces and whites of white meat, to try with un-fried Asian cuisine.
The cellar: Paraschos
The Paraschos are a family of Greek origin that produces wine in an artisanal way in the small village of San Floriano del Collio, in the province of Gorizia, a step from the Slovenian border. The San Floriano area is at an altitude of 276 meters above sea level and is characterized by a special microclimate; Protection of the Julian Alps to the North and the Carpathian Highlands in Southeast, the ventilation from the narrow valleys of the Isonzo and Vipacco and the influence of the Adriatic that is added to a single soil composed of marcas of Eocene origin, which the locals call "Ponca", contribute to the production of great wines. The area is famous because since antiquity, the practice of fermenting must with its skins has been consolidated for a few days to improve its flavor, scent and longevity over time. The Paraschos begin to produce wine for their farmhouse, still in operation, then to pass in 2003, to a natural viticulture for obtaining traditional wines that mirror the territory, to be proposed to the general public. Their vineyards are cultivated at Chardonnay, Sauvignon, Friulano, Yellow Ribolla, Picolit, Verduzzo, White Pinot, Friulano, Merlot, Barbera and Refosco. Vineyards do not use chemical fertilizers or herbicides and fertilizers occasionally occur and only with appropriately seasoned animal manure. In the cellar fermentations occur spontaneously without the use of selected yeasts with long refinements in large oak barrels on their own yeasts. Since 2009 the Paraschos with the best grapes create the selection "Amphoreus", fine wines in terracotta amphora. Their wines are absolutely territorial and unique.
