ORANGE WINE

The Orange Wine wines are different from all the others: they are not white, nor red, but as the name says orange, although most of the time they are a beautiful bright amber color. The color derives from the particular vinification technique, which was born in Giorgia, cradle of wine, more than 5000 years ago. The technique consists in leaving the white grapes in contact with their skins for a period ranging from a few days to a few months depending on the grape variety used, and both the vinification and the aging take place very often in the typical terracotta amphorae . A vinification as used for red wines, which serves to make the wine much more complex both on the nose and on the palate, where we will have rather strong and impacting aromatic notes, with a tannic sensation on the palate, unusual if one thinks that it goes white grapes. The pioneer of Orange Wine in Italy, was certainly Josko Gravner, who is not satisfied with the production of his wines, decides to go to Giorgia to learn how to make wine according to local traditions, which consist in putting macerating wine in large amphoras of terracotta that remain buried in the earth for months or years. Take home some of those amphorae and start using them to make Ribolla Gialla. A wine that will give birth to the Orange Wine movement in Italy. Today among the best producers of Orange Wine we find: Terpin, Radikon, Podversic, Vodopivec, to stay in Friuli, while in the rest of Italy there are: Dettori, La stoppa, Bajola, and many others. Finally, it is recommended to taste them at a temperature of 14/16 °, and to open the bottle some time before putting it on the table. The pairing possibilities are extensive, combined with raw fish, exotic cuisine, red meat and game. In short, the Orange Wine wines are not for all palates, some love them others hate them.

Sollùchero by Nevio Scala is the most fragrant wine of the company, the result of the dry expression of white and yellow Moscato grapes that come from the vineyard overlooking the old courtyard of the cellar. The wine expresses itself with aromatic hints that mainly recall yellow-fleshed fruit, citrus fruits and white flowers, while the sip shows a sweet, soft and persistent nature on the palate.

Franco Terpin's Quinto Quarto Ribolla is a wine made from 100% Rebula grapes.  After manual harvesting, the bunches ferment spontaneously in steel thanks to the use of indigenous yeasts, macerating in contact with the skins for three days; then we move on to the refinement phase, always done in steel for 8 months. Unfiltered before bottling. It has a golden yellow color. On the nose aromas of ripe fruit with mineral notes. On the palate it is pleasant, medium-bodied and very easy to drink.

In the Romagna dialect, *Pirona* means "spinning top"—a reference to the shape of Georgian *qvevri*, the terracotta vessels in which this wine ferments on the skins for 31 days. During maceration, the cap remains intact and unbroken, allowing the wine to follow its own natural course. After racking, the wine ages in stainless steel tanks until late spring. In the glass, it displays a golden yellow hue with amber highlights. The nose offers notes of dried apricot, honey, aromatic herbs, and orange zest. Paglia is the orange wine from Azienda Agricola Baccagnano, produced from Albana grapes via extended skin maceration. Oslavje is a wine with a slightly coppery golden color. The nose is complex, persistent, with hints of fruit, in particular apple and dried fruit.
