Hubert e Heidi Hausherr
Hubert and Heidi Hausherr's family estate is located in the historic village of Eguisheim near Colmar in Alsace in northern France. Here they cultivate 4 hectares of vines with a biodynamic and organic approach where respect for the plant and the environment make their wine a healthy and lively drink. The quality of the soil is the foundation of their peasant agriculture, it is no coincidence that the vines are worked with a tow horse or simply by hand and then subjected to soft vertical pressing, in a manual press, so as to protect the quality of the fruit. The juices are collected directly in the tanks and here they begin their fermentation spontaneously, in 2 or 3 days, thanks to indigenous yeasts. All these attentions lead the vineyards to develop a natural resistance to chemical and parasitic aggressions. The work of Hubert and Heidi helps to ensure the quality of the grapes and their juice, a quality that avoids adding anything during the birth of the wine.
