Erbaluce di Caluso Passito DOCG "Tallin" Ilaria Salvetti
This splendid passito is dedicated to the grandfather who was called Tallin, recognized Maestro Vignolant. The Erbaluce grapes are harvested manually in the first ten days of September. After harvesting, the grapes are arranged manually on mats of bamboo canes overlaid on a wooden structure, in naturally ventilated floor. The withering takes place naturally and lasts about 4 months. The grapes harvested from the passitaia are passed through the destemmer-crushing machine and then slowly pressed. The fermentation takes place in stainless steel tanks with indigenous yeasts deriving from the same dried grapes. The aging is in: in oak and acacia barrels for 36 months, then in bottle for 6-12 months before the sale. The Tallin is golden yellow with amber reflections.
