Rami - Cos
Ramì is an authentic and refined Sicilian white wine, born from a blend of Grecanico and Inzolia. The grapes come from vineyards over ten years old, cultivated according to biodynamic principles on characteristic red earth soils, at an altitude of 240 meters. The harvest is carried out exclusively by hand to preserve the integrity of the bunches. In the cellar, after a delicate destemming, fermentation occurs spontaneously using only indigenous yeasts, thus expressing the full personality of the terroir. Aging continues for several months in concrete tanks, enhancing its purity and balance. In the glass, it displays a luminous golden yellow color. On the nose, it captivates with intense and elegant aromas of ripe yellow fruit, Mediterranean flowers, and delicate honeyed nuances. The palate is enveloping and harmonious, medium-bodied, supported by a vibrant freshness that accompanies a long and satisfying finish. A white wine with character, capable of expressing the most authentic Sicily in every sip.
Service
We recommend tasting the Ramì at a 10/12 ° temperature in tulip goblets. Daily wine but left in the cellar a few years can give you great emotions.
Pairing
The Ramì is suitable for a fish tartare, prime dishes with vegetables, to try with a fish carbonate.
Cellar: Cos
Cos was born in the eighties when the three friends Titta Cilia, Giusto Occhipinti and Cirino Strano decided to rent from Giuseppe Cilia, the dad of Titta, the family cellar and the adjacent vineyard. What seemed like a game led them over the years to revolutionize not only the demasion of Cerasuolo di Vittoria but all the wine-growing of the entire Sicily region. The principles of biodynamic viticulture have begun to follow for the cultivation of the vineyard, allowing the vineyards to remain in harmony with the soil, and in the cellar, among the first in Italy, fermentations and refinements in terracotta amphorae, a material that It does not give any flavor and allows to donate wines of great originality. Today, the cultivated hectares are 30 places at 250 m.s.m.m with a north / south exposure on limestone / silica soils and native Sicilian vines such as Avon Black, Zibibbo, Frapapto and Moscato are bred. The wine selection is extensive, but all the wines of Cos are unique, extremely linked to the territory and a personal style and very expressive.
