The sip is full-bodied, mineral and very fresh, of great intensity and persistence. the grapes come from 60-year-old vines located on clayey and calcareous soils made up of yellow marl. After manual harvesting, they are subjected to soft pressing. The must thus obtained is left to settle naturally for 24 hours before spontaneous alcoholic fermentation, without the addition of selected yeasts and sulphites. The long maturation period lasts for 75 months and takes place in full 228 liter barriques of second and third passage under the veil of flor yeasts. There is little to say, Vin Jaune Les Bruyères is a refined wine where time cannot be counted: drink it now or in 50 years (no joke), the older it gets, the more it surprises you.
Service
We taste a temperature around 12/14° C. It is recommended to serve it in Tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Winery: Domaine Labet
Domaine Labet is a small family-run business located in Rotalier, Jura, in the east of France. The company was founded in 1974, but it is only in 2003, with the arrival of Julien who is oriented towards a natural philosophy. Julien cultivates 15 hectares of vineyards with the classic Jura vines: chardonnay and savagnin for the whites, pinot noir and trousseau for the reds. The vineyards, some of which reach 60 years of age, are treated in a maniacal way by Julien, with the total absence of fertilizers and insecticides, and the only protection is given by sulfur and copper. In the cellar, spontaneous fermentations and refinements in oak barrels are preferred. The Labet domaine does not blend different vines but vinifies them in purity and, in some cases, produces single-cru cuvée.
