Cellar: Fedora
The Fedora (hat) winery is located in that part of the Vipava valley called "Vipavska Brda", where the Vipavska Dolina and the Karst meet: climatically unique, with lots of sun during the day, remarkable excursions between night and day, and whirlpools of Bora crossing the vineyards. Fedora is a family matter, starting from the great-grandfather of Valter, the current owner, who had already cultivated the vineyard in Dolanci since the end of the 19th century, to his grandfather, his father, interrupted only by the nationalization of the vineyards after the Second World War and who it forces to give the grapes to the state cooperative, like everyone else. Now Valter, together with his family, decides, after a few years of experimentation, to return to Dolanci from Ljubljana, and not to give the grapes to the local cooperative anymore. They immediately dedicated themselves to the recovery of old vines and varieties, and planting new ones. The choice falls on the local vines: Ribolla, Zelen, Pinela, Refosco, Picolit, Vitovska and other very, very local varieties today make up almost all of the production, with some Chardonnay left over from the time when the international vines had taken the upper hand. The principles of biodynamics govern the work in the vineyard, and the minimum of intervention in the cellar, to return extremely fresh, saline and varietal wines.
