Côtes du Jura AOC Chardonnay"La Pellerine" - Domaine Labet
Chardonnay "La Pellerine" is a full-bodied white wine, with a complex and evolved aromatic profile, vinified and aged in barrique. The grapes come from two vineyards planted in 1900 and in 1920, which are located about 260 meters above sea level, in a terroir that is characterized by the clayey and calcareous subsoil. In the cellar the fermentation is spontaneous and takes place in barrique. The final phase of aging has a duration of 18 months, and is entirely carried out in barriques, where the wine remains to rest on the fine lees.On the nose the aromas tell of a stratified olfactory plot of character, dominated by fruit, presented with different nuances. On the palate it is full-bodied, dry, soft, and has a very persistent finish. Average quantity produced: 300-600 bottles per year.
Service
We taste a temperature around 12/14° C. It is recommended to serve it in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Excellent as an aperitif, paired with fish starters, fish main courses, ideal pairing with shrimp wrapped in bacon.
Winery: Domaine Labet
Domaine Labet is a small family-run business located in Rotalier, Jura, in the east of France. The company was founded in 1974, but it is only in 2003, with the arrival of Julien who is oriented towards a natural philosophy. Julien cultivates 15 hectares of vineyards with the classic Jura vines: chardonnay and savagnin for the whites, pinot noir and trousseau for the reds. The vineyards, some of which reach 60 years of age, are treated in a maniacal way by Julien, with the total absence of fertilizers and insecticides, and the only protection is given by sulfur and copper. In the cellar, spontaneous fermentations and refinements in oak barrels are preferred. The Labet domaine does not blend different vines but vinifies them in purity and, in some cases, produces single-cru cuvée.
