Cantina: Stefano Zoli
The one between Stefano Zoli and Matelica was love at first sight. Handyman from Romagna, illuminated on the road to Damascus by a bottle of Pergole Torte, Stefano at 28 enrolled in Viticulture and Oenology at the University of Bologna and at the same time began working in Romagna with Sangiovese. He meets Aroldo Bellelli, an esteemed agronomist and oenologist from the Marche region with a strong whitish sensitivity and thanks to him he discovers Matelica. From such a special terroir for Verdicchio comes the desire to make a dream come true, starting from a small and old vineyard with a very high potential. The vineyard is made up of 3,500 very old vines reared double overturned on a soil composed of flisch, yellow marl and limestone exposed to the South / East at 430 meters above sea level. The grapes are harvested in mid-October and softly pressed with whole grapes in reduction (the press is saturated with CO2) with subsequent spontaneous fermentation in steel and cement.
