Stefano Zoli's Belrespiro Verdicchio di Matelica Riserva is made from grapes that come from a small owned vineyard with 60-70 year old plants located on calcareous soil. The idea of wine was born during Covid when walking among the rows was a breath of fresh air and freedom, a Belrespiro. The grapes are harvested in mid-October and softly pressed with whole grapes in reduction (the press is saturated with CO2) with subsequent spontaneous fermentation in steel and cement.
