Colli Tortonesi Timorasso - Oltretorrente
A rich and full white wine made from Timorous grapes coming from vineyards with an average age of 14 years. The philosopher of Oltretorrente is to produce it with spontaneous fermentations, no maceration on the skins or fermentation manolactic so as to preserve the acidity and freshness of the wine. Aging on the skins for 8 months in steel tanks to enhance the complexity and stability of the wines naturally. The Timorasso has a pale yellow color with fruity and floral hints that evolve into goudron scents and focaccia. On the palate it is sapid and typically mineral, an acidic verve makes it pleasant and very persistent. Only 2000 bottles produced.
Service
We recommend tasting Timorasso at a temperature of 8/10 ° in tulip goblets. Wine to drink immediately but it will express its best features in a few years.
Pairing
Great as an aperitif, to be combined with fish paints, to try with a quiche of vegetables.

The Oltretorrente company is located in the territories of the Colli Tortonesi in Piedmont. Managed since 2010 by Michele and Chiara who after several experiences in the wine-growing company decide to start a business that best reflects their ideas in the field of wine. Their vineyards extend over 3 hectares, divided into 6 plots, are exposed to the north and south to a height of 300 m.s.l.m. And some of them reach the century of life, however the average age ranges from 15 to 100 years. Michele and Chiara's goal is to make wines balanced between the peasant tradition and the production of quality wines that is the best way to express the history, soil and identity of the Tortonese Hills. Their production is based on 14,000 bottles divided into 4 wines: 2 whites, Cortese and Timorasso, and 2 reds, Rosso Colli Tortonesi and Barbera Superiore. Oltretorrente wines are unique wines, an expression of terroir and not reproducible elsewhere.
