Accamilla - Camerlengo
Accamilla is a macerated white wine made with Malvasia grapes harvested after a slight over ripening. In the cellar the fermentation is spontaneous with 10 days maceration in chestnut vats. After refining it is bottled without filtration. Accamilla is straw-yellow to golden. On the nose the aromas are intense and complex in which fruity and floral notes are recognized with aromatic, mineral and herbaceous hints. At the sip it is dry, elegant, with a good body, with a good acid and mineral note. Exceptionally persistent final.
Service
We taste Accamilla at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairing
It goes perfectly with first courses of vegetables, second courses of fish, semi-seasoned cheeses, to try with a plate of swordfish with sauce.
Winery: Camerlengo
Camerlengo is a beautiful reality that is located in Rampolla, in the province of Potenza. The name of the cellar is taken from the title of the Cardinal who administers the Apostolic Chamber and takes care of the temporal goods of the Holy See. Camerlengo is the dream turned into reality by Antonio Cascarano, a professional architect in Rome, who, driven by his passion, decided to become a small entrepreneur of high quality wine. Antonio has begun to restructure the old cellar and take care of the old Aglianico vineyards inherited from his grandfather, who since 1900 produced wine and oil. The five hectares of organic vineyards are found on the tufaceous soils rich in potassium and silicon of Monte Vulture, the extinct volcano of Basilicata, among chestnut and olive trees. For the renovation of the cellar he used the coccio pesto, a material used by the Romans. Spontaneous fermentation, indigenous yeasts and aging in wooden barrels, this is Antonio's philosophy for the production of his wines. To the two red wines produced with Aglianico, a third one is added based on Malvasia di Rampolla called "Accamilla", dedicated to his bull dog, Camilla, who disappeared a short time ago
