Xarel.lo by Clot de les Soleres is a fresh and mineral sparkling wine produced from 100% Xarello grapes, a white grape variety from Catalonia. Spontaneous fermentation of 4-5 days, and then it is bottled with a residual sugar in order to favor the refermentation. Aging on its lees for 13 months, and disgorging in October of the year following the harvest. No filtration or clarification.

Service
We recommend tasting it at a temperature of 6/8 ° in a flute ballon glass. To be drunk immediately but will express its best in a few years. It is recommended to keep it in a horizontal position in a cool, damp and dark cellar.
Pairing
Excellent wine as an aperitif, with light first courses, with fish-based main courses, to be tried with sea bass tartare flavored with fennel.

lot de les Soleres takes its name from a parcel belonging to the centuries-old Heretat Ferrer de la Vall winery. The project, which was born in 2008 at the behest of Carles and Montse, aims to revalue an area that has always been suited but devoted above all to the sale of grapes to large quarry producers. Low yield, biodynamics and completely natural philosophy are the dogmas used to restore dignity to a territory annihilated and exploited by the commercial logic imposed by the 70s, 80s and 90s. The grapes, which are grown without any type of herbicide, plant protection product or chemical fertilizer, are mainly the traditional ones of Catalonia (xarel-lo, macabeu and granatxa), the vinifications are carried out without the use of additives and give life to wines with a very strong territorial imprint. The "ancestral casual" method is very interesting, which consists in bottling the wine with still some residual sugar in order to give life to wines with an ever new and always different effervescence and character when fermentation starts naturally.
