Naolta is a sparkling wine obtained with the technique of fermentation in the bottle using white grapes. It has a pale straw yellow color with a fine and persistent foam. The nose is fragrant and floral and fruity aromas can be recognized, with hints of pear, apple and almond combined with the characteristic notes of yeast and delicate nuances of "bread crust". Naolta - Azienda Agricola Fiorin Silvia

Naolta is a sparkling wine obtained with the refermentation technique in the bottle using white grapes. The vines are found on medium-textured soils and are reared with a guyot system. The harvest is manual, and in the cellar the grapes are pressed directly and in whole bunches. At Easter the wine is bottled for free fall. The bottle is closed with a crown cap with its own yeasts and a part of sugar residue. Upon the arrival of the first spring warms the refermentation will start again until the sugar is completely transformed. Since Naolta is not uncooked it presents the typical deposit on the bottom, as the tradition of once wanted. Naolta is pale straw yellow with a fine and persistent mousse. The nose is fragrant and you can recognize floral and fruity scents, with hints of pear, apple and almond combined with the known characteristics of yeast and delicate nuances of "bread crust". At the sip it strikes for its extraordinary drink, it is very fresh, light, with excellent minerality and sapidity.

Service

It is advisable to degustrate it at a temperature of 8/10 ° in ballon flute. Wine to drink immediately. It is advisable to serve it preferably safer.

Pairings

Excellent as an aperitif, with a plate of cured meats and cheeses, with cooked and raw fish, to be tried with the inevitable spit according to the tradition of Treviso.

Silvia The Fiorin Farm is located in Pieve di Soligo, in the heart of the Prosecco production. The company was born from the passion of the grandparents of Silvia, the current owner, Alfonso and then grandfather Francesco, irreplaceable masters of life and curious observers who began to cultivate the kiwis well forty-eight years ago. Today Silvia cultivates 14 hectares of biodynamics, dedicating them to vineyards, part to rotary forage and partly to the production of Kiwis. The vineyards cover about five hectares on medium-mixture soils with guyot system and enjoy excellent ventilation being ventilated by the breeze blowing from San Boldo. The grapes are harvested exclusively by hand and carefully chosen, and the result is the "Naolta", a sparkling wine that wants to be a tribute to the tradition of refermenting the wine in the bottle after Easter following the moons. The Fiorin family strongly believes in authenticity, bioethics, biodiversity and the not very modern concept of a farm not destined for monoculture, but conceived as an overall vision, where animals, people and fruits create a new balance every day.
