The Valdobbiadene DOCG "Dosaggio Zero" is the classic metdo of Ca dei Zago. Born in 2010 and is obtained from Glera grapes that come from a single vineyard in S. Pietro di Barbozza with vines of 80 years. The first fermentation is spontaneous in steel tanks with a short maceration on the skins. Second fermentation in the bottle with a fermentation that lasts 16 months. After disgorging no liqueur d'expedition is added. Cellar: Cà dei Zago
Cà dei Zago is located in San Pietro in Barbozza, one of the areas most prosecco production. Already in the 1930s, Christian's grandfather, the current owner, produced prosecco tradition according to tradition, to the fermented wine he added a small percentage of sugar and bottled. With the arrival of the first warm in the spring, it took up the fermentative activity in the bottle and the wine to the stappatura was vibrant and sparkling. Today, Christian, together with Marika, does nothing but follow the tradition. He cultivated his vineyards of Glera on two different parcels, one in San Pietro where we find sandy and clay soils the other at the village of Saccol with prevalence of sandstone rock. The plants are bred secondhand the rigid dictates of biodynamics and have an average age of 60 years. Christian Zago produces about 50000 bottles a year and its velvet-colored prosecco is the faithful mirror of a land of genuine peasant tradition.
