Monte Caro amarone is an important and structured red wine made exclusively from Corvina, Corvinone and Rondinella grapes. Refine in barrel according to specification. The glass is intense ruby red in color. The nose reveals intense and clear hints of ripe cherry, black cherry, small berries, followed by spicy notes. In the mouth it is dry, soft, enveloping, of good freshness and great balance.

Amarone della Valpolicella DOCG - Il Monte Caro
Amarone del Monte Caro is an important and structured red wine obtained exclusively from Corvina, Corvinone and Rondinella grapes. The grapes are harvested by hand and vinified spontaneously with the only indigenous yeasts after a long drying in the fruit cellar. Refine in casks according to specification. The glass is an intense ruby red color. Intense and clear hints of ripe cherry, sour cherry, small berries, followed by spicy notes emerge on the nose. In the mouth it is dry, soft, enveloping, with good freshness and great balance.
Service
It is advisable to serve it in large glasses, in order to give the perfumes the possibility to evolve with the oxygenation of the wine, at a temperature between 18 and 20 ° C. Wine to forget in the cellar.
Pairing
Perfect with autumn and winter foods, such as braised meats, stews, stews, roasts, and especially game, to try with aged cheeses and the same risotto all'Amarone. Also drunk alone is a worthy final of an evening meal or can be the companion of a pleasant meditation.
Winery: Il Monte Caro
The Monte Caro winery is located in Mezzane di Sotto, in the province of Verona. The winery is located on a hill 300 m above sea level, on soils ranging from clay with basalt rock substratum to strongly limestone and stony, and enjoys an exceptional microclimate dry and ventilated thanks to the presence of air coming from the north and the soil temperature higher than normal, due to its volcanic origin. The winery was born from an idea of Enzo, father of the current owners, a photographer who in 1986 discovered a hilly terrain in Mezzane di Sotto and, together with his wife Carla, decided to undertake the agricultural adventure. Over the years they set up the vineyard and the olive trees, and later built the rural house, thus giving life to the estate. Today, his father Enzo, who takes care of the agricultural work, joined his sons; Giorgio, an engineer specialized in renewable energy with an oenological vocation, sommelier and curator of all wines, Emanuela, a lover of photography, but above all viticulturist and responsible for the image of the winery. The philosophy of Il Monte Caro is to produce wines in a healthy and genuine environment, with the desire to bring to the table every day a natural wine of excellence. The cultivated hectares are 7 where we find the typical grapes of Valpolicella: Corvina, Corvinone and Rondinella, and some rows of Cabernet Sauvignon. The care of the vineyard is in total agreement with nature, and only the best grapes, which are selected manually during the harvest, are taken to the cellar, where they are vinified in sponatnea fashion without the use of chemicals. Two wines produced; Valpolicella Superiore DOC and Amarone Monte Caro DOCG.
