Austri Langhe - San Fereolo
Austri Langhe is produced using the Barbera grapes that come from the vine called Degli Austri that poggiono on calcareous soils. The vines are cultivated according to the principles of biodynamics. The harvest takes place in the second week of October by hand. The fermentation is spontaneous with only indigenous yeasts in wooden vats with daily pumping over. At the end of fermentation the wine is postfermentativa maceration on the skins for 4/5 days. After fermentation, the wine is drawn off and continues the aging in wooden barrels on its lees for 16 months late. Before putting on the market passes a period of several months in steel tanks and bottle. For aging is only using the shell barrels large and small because the idea is to produrrre, a Barbera from two sides, a Piedmontese and serious and an international by immediate compression result. Ruby-red color. The nose opens with fruity scents of immediate pleasure, vegetal notes and tertiary aromas. The palate is warm, enveloping, freshness emanates throughout the mouth, a nice tannins and long finish.
Service
We taste the Langhe Austri at a temperature of 16/18 ° in large glasses. We recommend to drink it right away but, if left a few years in the cellar you can discover with pleasure the potential evolutionary Dolcetto grape.
Pairings
It combines perfectly with pasta dishes of the Italian tradition as pasta with tomato sauce or meat sauce, let him try the potato gnocchi with hare sauce.
Cantina San Feriolo
The winery is located in San Fereolo Borgata Valdibà, in the town in the heart of Dogliani Dogliani Dolcetto denomination. At the helm of the winery's Nicoletta Bocca, arrived in these beautiful areas in the nineties moved from Milan. Nicoletta has learned everything from his neighbors winegrowers but with time it has tried to carve out its own identity, its own wiggle room in making its wines. Its vineyards, Austri, Tuscany, the Riavolo Coste, Costabella and Cerri, are scattered anywhere on the right side of the River Rea, between Dogliani and Monforte d'Alba, in the south of Piedmont. Nicoletta has always tried to buy vineyards that could give strength to its wines, wine struck the memory of the place where it was produced. He embraced the philosophy of biodynamics with minimal intervention in the vineyard and in the winery. Today it is a company of 12 hectares which produces about 40 thousand bottles. Not only but also Dolcetto, Barbera, Nebbiolo and a white-based Rielsing Rhine and Gewurztraminer.
