Babiole - Andrea Calek

Babiole by Andrea Calek is a fresh red wine, immediate in fruity aromas, crunchy and with a slightly perceptible tannin. It comes from a cuvee of Grenache and Syrah grapes, which come from vineyards located on calcareous clay soils. Vinification takes place with carbonic maceration for about 18 days, without any addition of sulphites.

Service

We recommend tasting it at a temperature of 16/18° in tulip glasses. Wine that can be drunk immediately but will express its best in a few years. It is recommended to keep it in a horizontal position in a cool, damp and dark cellar.

Pairing

Wine that goes wonderfully with salumi appetizers and meat main courses.

Cellar: Andrea Calek

Andrea Calek is a winemaker of Czech origin who traveled the length and breadth of Europe in a caravan before settling in France in 2007, in Valvignières, in the heart of the Ardèche. Andrea cultivates about 5 hectares of vines located in a radius of just a few hundred meters around the cellar, where on soils of clayey-calcareous origin, there are plants of syrah, grenache, carignan, viognier and chardonnay. The vinification takes place without any use of chemicals, and the fermentation takes place using indigenous yeasts and without the addition of sulfur dioxide. Andrea's goal is to preserve the fruit in all its splendour. His wines are uncompromising bottles, with a splendid acidity that gives them freshness and a high degree of drinkability. Production is close to 15,000 bottles, exported to Europe, the United States and Japan.
