Service
We recommend tasting it at a temperature of 16/18 ° in tulip goblets. Wine to drink immediately but if left a few years in the cellar can give great emotions.
Pairing
Ideal with meat dishes, semi-hard cheeses, to try with an oven baked.
Cellar: Domaine Fabien Coche
The Domaine Coche has been located in Meursault in the Cote d'Or for several generations. It was founded around 40 'by Alian Coche-Bizouard. Today it is led by Fabien who manages 12 hectares of vineyards distributed between Meursault, Pommard, St Aubin, Auxey-Duresses, Monthelie, Saint Romain, Montrachet. In the vineyard there is a traditional approach, scarcely invasive and respectful of the territory, with the total elimination of herbicides and chemicals. The average age of the vineyards is between 40 and 100 years. In the cellar the fermentations are spontaneous, the macerations are prolonged (for red wines), the wood is used sparingly, and no filtration or clarification is carried out, while the sulfur is used in homeopathic quantities. all this translates into slender, seductive wines, supported by a freshness and minerality that dynamize the drink. The labels are many, the company makes 28 different appellations, for a total of about 60,000 bottles per year.
