Sang del Pais is a red wine produced with the Le Fer Servadou grape, an autochthonous grape from the South-West of France. Aging is in steel and some months in the bottle. It has a ruby red color with violet reflections. On the nose the aromas play between spices, pepper, red fruits and cassis. In the mouth it is warm, fresh with mordant tannins, pleasant.

Marcillac "Lo Sang del Pais" - Domaine du Cros
Sang del Pais is produced with the vine Le Fer Servadou, an autochthonous vine of South-West France. The fermentation is spontaneous in steel tanks and the wine remains in contact with the skins for three weeks. The next refinement is in steel and a few months in the bottle. Sang of pais has ruby red color with purple reflections. At the nose the perfumes play between spices, pepper, red fruits and cassis. In the mouth is warm, fresh with mordable tannins, pleasant.
Service
We taste the Marcillac "Lo Sang del Pais" at a temperature of 14/16 ° in tulip chalice. Wine to drink at once but if left a few years in the cellar can give great emotions.

All-meal wine, great with a second of meat, to try with a spaghettone with tomato sauce and pecorino cheese.
Cellar: Domaine du Cros
In the center of Aveyron lies the Marcillac Valley particularly favorable to the cultivation of the vine. Marcillac vineyards are planted on red clay slopes, called Rougiers, overlooked by limestone highlands. The current area of A.O.C., covers about 180 hectares, making it one of the smallest denominations in France. Philippe and Julien Teulier, owners of Domaine du Cros, belong to the dozens of producers who are in Marcillac. Until 1982, Domaine du Cros had only one hectare of vineyard and produced about 4000 bottles a year. Since 1982 the area has grown, acquiring both old vineyards and planting new ones reaching about 30 hectares. Of these 30 hectares, 26 hectares are in production A.O.C., 2 hectares are not yet in production and 2 ha are Vins de Pays. Since 2006, Julien has also been involved in the company, which ensures the continuity of a family tradition.
