Bolgheri Rosso Doc “Pievi” - Fabio Motta -
The Bolgheri Rosso DOC "Pievi" by Fabio Motta is a blend of Merlot, Cabernet Sauvignon and Sangiovese, which represents the typical assembly of the Bolgheri area. The fully ripe grapes are fermented exclusively with natural yeasts in truncated conical vats of thirty quintals, the cap is submerged manually for the entire duration of the fermentation which normally takes 2 weeks for each variety. After the svine, the wines are placed in second or third passage barriques, in which the malolactic fermentation naturally takes place. The assembly of the three varieties takes place about three months after the harvest. The wine remains for a year to refine in wood and is bottled without filtering or clarification. The nose gives intense notes of black fruit, violet, tobacco, while the sip shows a ripe tannin and great balance between alcohol and aromatic component.
Service
We taste it to a 16/18 ° temperature in tulip glasses. everyday wines but left a few years in the cellar to rest can give great emotions.
Pairings
The Pievi is ideal with pasta dishes with tomato sauce, red meat, medium-aged cheeses, excellent with the lamb stew.

Fabio Motta represents the new and young face of the Bolgheri area. Of Brianza origins, from an early age and moved by a great passion for wine and for the work of the artisan winemaker. After graduating in agriculture, he began working in the cellar of his father-in-law Michele Satta, a legendary winemaker from Bolgheri. Its vineyard consists of a plot, called Le Pievi, almost 20 years old, located at the foot of the hill of Castagneto Carducci and, of an excellent vineyard of white grapes, especially Vermentino, of over two hectares, in Le Fornacelle. In 2012 he bought what had always seemed to him an excellent vineyard: Le Gonnare. The name means "the washerwomen" because it is located at the foot of an ancient stream. So a soil of torrential deposits, with a lot of skeleton, oriented to the north, deep and rich in clay. About 7 hectares in all. A small reality, so much so that he can personally follow every little step of cultivation and winemaking. For Fabio, wine must give pleasure and emotion and tell a piece of his land and his work.
