We taste it at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but will express its best in a few years.

Winery: Manon
Tim Webber and Monique Milton founded Manon Farm in 2016. The company is located on the shores of the Forest Range on a ridge about 600 meters above sea level, in the Gulf of Saint Vincent. The soils are a mix of red clay, quartz and shale, which gives the wines body and a marked minerality. Only six of the ten hectares of the company are planted with vineyards, the rest is left to orchards, vegetable gardens, livestock, woods and many kangaroos. The work in the cellar is guided by patience, judgment and an amazing maturity for the years they have. The winemaking is dynamic, allowing the two to produce wines based on what nature offers them in that season and, consequently, releasing different cuvèes each year.
