Winery: Ajola
Ajola is a small natural company located in the municipality of Sugano, on the border between Lazio and Umbria, between Lake Bolsena and Orvieto. Here the soils are volcanic, composed of red, brown, almost black earth. Behind Ajola we find Jacopo and Luigi, two young winemakers, very attentive and tenacious workers, who have decided to focus on the native vines of the area to make wines that reflect the terroir. A few hectares cultivated in biodynamic where we find plants of Procanico, Verdello, Druppeggio, Trebbiano, Malvasia, Moscato, Sangiovese, Pinot Nero, and Aleatico. In the winery Jacopo and Luigi try to intervene as little as possible so as not to ruin what nature has given him, prefer spontaneous fermentations, refinements in steel tanks or chestnut barrels, and obviously do not use added sulfur dioxide. All the wines of Ajola are very fresh, clean, with little alcohol content, not of great structure but super drinkable.
