Producer Ajola

UMBRIA

Ajola is a farm located in Sugana between Lake Bolsena and Orvieto, on the border between Lazio and Umbria. The volcanic area, with red, brown, almost black earth, is particularly suited to the production of high quality wines. The project is carried out by Jacopo and Luigi, two young vintners who, in addition to dealing with vineyards, grow olive groves, fruit trees and vegetables. The wines produced by Jacopo and Luigi recall the peasant tradition and are simple, rustic and simple to drink. The vineyards are cultivated in biodynamic and represent local autochthonous grapes like Procanico, Verdello, Dolpeggio, Malvasia and Sangiovese. In the cellar the fermentations are spontaneous and nothing is added to the must, the wines are not filtered or clarified before being bottled, and obviously no sulfur is added. The wines of Ajola are very fresh, clean, not big body but all super drinks.
