"Iarsera" by Calafata is a red wine that comes from Calafata's desire to make wine from their main grape variety, Sangiovese, in purity. The result is a wine of great personality and depth, a version of crisp and fresh sangiovese that does not preclude the attitude to aging.

Iarsera - Calafata
"Iarsera" by Calafata is a red wine of great personality and depth that comes from pure Sangiovese grapes. The grapes come from a vineyard located on the hills of Lucca on medium-textured soil, with a clayey tendency and rich in skeleton, and is grown according to organic and biodynamic methods. After the manual harvest, in the cellar the grapes undergo spontaneous fermentation with a maceration on the skins for about 12-14 days. Then it refines in steel and cement for a period of 24 months, before bottling without filtration. "Iarsera" is ruby red in color. The nose offers pleasant fruity and spicy scents. On the palate it is firm, warm, full-bodied, with tannins present.
Service
We taste the Iarsera at a temperature of 16/18 ° in the tulip glass. Wine to be drunk immediately but left in the cellar for a few years can give great emotions.
Pairings
It goes perfectly with pasta dishes based on tomato sauce, to try with sausage in a pan with broccoli.
Cellar: Calafata
A young cooperative located in the Lucchesi hills, it takes its name from the master caulkers that with the skilful use of the rope and pitch made the boats impermeable to the sea and safe to storms. Calafata is an idea of people capable of combining the quality of the products and the rigor required by the earth. Founded in 2011 by the meeting of Mauro Montanaro, Marco Bechini, Maik Tintori and Lorenzo Citti, it has gradually enriched by joining other workers from different sectors: from tourism, to communication, to alternative economy circuits, where everyone contributes with their own time and its expertise to the idea of a cooperative to make it more effective, plural and more beautiful in every detail. The vines grown are Vermentino, Malvasia, Trebbiano and Moscato for whites and Ciliegiolo, Aleatico, Sangiovese, Cabernet Sauvignon, Merlot and Syrah for reds. In addition to wine, oil, honey and vegetables are produced.
