Authentic, elegant, and deeply rooted in its terroir, this Tai Rosso originates in the heart of the Colli Berici—specifically in Barbarano Vicentino—where limestone-marl soils and distinctive, stony red clays imbue the grapes with intensity, finesse, and great character. The vines, averaging around 30 years of age, are meticulously tended, and the harvest is carried out entirely by hand using small crates to ensure only the finest clusters are selected. Following about a week of skin maceration in steel tanks, fermentation proceeds spontaneously using indigenous yeasts, thereby preserving the grape variety's most authentic identity. Six months of aging in large French oak and cherry wood barrels imparts balance and complexity without masking the wine's varietal character. The result is a wine that embodies the essence of Tai Rosso: fragrant aromas of small red fruits, delicate spicy notes, and a pleasant freshness that invites another sip. Versatile and food-friendly, it is perfect as an aperitif and pairs elegantly with pasta dishes, cured meats, white meats, and medium-aged cheeses. Its ideal pairing remains the traditional *Baccalà alla Vicentina* (Vicenza-style salt cod), a combination that allows the wine to express its full harmony.

The winery: Azienda agricola Pialli Alessandro
Azienda Agricola Pialli traces its roots back to the winemaking traditions of the 1960s. Both grandfathers—Silvio Tognetti, known as "Cìo Bacaro," and Gregorio Pialli—cultivated small vineyards, personally vinifying and selling their own wine. The varieties grown at the time were primarily Tocai Rosso and Garganega, authentic expressions of the local terroir. Although both men ceased operations in 1999, their passion lived on. In 2001, the next generation took up the legacy, merging the two properties into a single winery and choosing to focus exclusively on producing Tocai Rosso di Barbarano. From the very beginning, all vineyards were converted to organic farming methods, with full respect for the environment and biodiversity. Today, Azienda Agricola Pialli cultivates 4.5 hectares of vineyards and produces between 13,000 and 20,000 bottles annually—depending on the harvest—while maintaining a strong connection to tradition and an unwavering commitment to quality.
