The Champagne Brut Reserve of Bérêche et Fils is a wine of great character, vibrant, of great complexity. It is a cuvée made up of Pinot Noir, Chardonnay and Pinot Meunier. The "BD'3C Brut Nature champagne by Bourgeois-Diaz is obtained from a cuveè composed of the 3 classic champagne vines; Pinot Meunier, Chardonnay and Pinot Nero, hence the name of the Cuveè 3C champagne. The base wine is aged for about 40% in wood. Second fermentation of at least 24 months on the lees before disgorgement. It has a straw yellow color with a fine and persistent perlage. The nose is citrusy of Amalfi lemon with notes of bread crust. On the palate its its characteristic is its fineness and elegance.

The Champagne Extra Brut Bulles de Comptoir 12 Caché dans l'evidance by Charles Dufour is a Champagne from the Cote de Bars obtained from a blend of Pinot Noir, Chardonnay and Pinot Blanc. The majority of the blend (80%) is made with the 2021 vintage, (year in which Dufour lost 80% of the production due to the combined effect of frost, downy mildew and botrytis), the rest 20% with 2010 reserve -2020 and reserve 1982-2009. Fermentation occurs spontaneously with indigenous yeasts. The refinement in Burgundian pièce and large barrel continues. No clarification or filtration before bottling.

For the creation of Champagne Extra Brut "Bistrøtage" B.17, Charles bought the grapes from his mother Francoise Martinot, which is why both names are listed on the label. The B.11 cuvée is made from 100% Pinot Noir grapes from the 2017 harvest from the Chervey cru. One year of aging 50% in neutral oak barrels, and 50% in steel tanks. It is rosé Champagne with a predominantly fruity, citrus and mineral aromatic profile. The sip is fresh and dynamic, but very soft.
