"Tonsur" is a fresh and territorial white wine that comes from a blend of white grapes. After aging in used tonneaux and in steel, it is characterized by a straw yellow color. Intense aromas of fresh fruit on the nose, spicy and caramelized hints with mineral notes. On the palate it is warm, soft, balanced, with an excellent acid texture. Persistent finish.

"Tonsur" - Pranzegg Weingut
Obtained from a blend of white grapes. The grapes come from 30-year-old vineyards growing on sandy-clay grounds. Vinification is carried out in two phases; 30% is fermented with only indigenous yeasts in open tonneaux with skins and rasps while the rest after a brief maceration of 5 hours on fermented skins in steel tanks. Next refinement in tonneaux until December and then proceeds in steel on fine lees. No clarification and filtration before bottling. Stuffed yellow color. Intense nose with fresh fruit scents, spicy and caramelized notes with mineral notes. On the palate it is warm, soft, balanced, with a good acid texture. Persistent finals.
Service
It is advisable to serve it at a temperature of 8/10 ° in tulip goblets. Wine to drink at once but will have a wonderful evolution in bottle with an ideal consumption between 2017/2020 if well kept in a cool, humid and dark basement in a horizontal position.
Pairing
It is beautifully combined with fish dishes, first courses, fresh cheeses, to try with a damp octopus dish.

The old farm of Martin Gojer is located in Campill, in the province of Bolzano. Martin buys it in 1997 and at the beginning grants grapes to the local cooperative until he begins to produce his own wine in 2010. A wine that can make its land feel, its customs, its vintage and its way of life. The vineyards are on the opposite side of the hill of Santa Maddalena at the mouth of the Isarco Valley and enjoy an exceptional microclimate given by the warmth rising from the Bolzano basin and the fresh breeze coming from the valley. All cultivated in biodynamics, with great manual and economic efforts, have never seen a disaster, and defense against diseases is carried out with targeted interventions of sulfur, natural remedies and copper. Martin Gojer cultivates Muller Thurgau, Pinot Blanc, Sylvaner, Chardonnay, Merlot, and above all Lagrein and Schiava, which has the merit of bringing back to the ancient splendor. The Lagrein grapes, with which it produces its Quirein wine, come from vineyards for about 15 years, while those of Schiava, which earn its most famous Campill wine, are collected by old vineyards of 60 years. Complete the range of Light Red Wine obtained from a Merlot, Lagrein and Schiava blend, and the only white wine, Tonsur, based on Muller Thurgau, Pinot Bianco, Sylvaner and Chardonnay. Wines where the purest essence of vineyards and vintages is exalted, very personal and with a strong character.
