Noella Morantin's Sauvignon Les Pichiaux is a fresh, gritty and fragrant wine. The mouth is crunchy and dynamic and plays on tension with sapidity and exotic and citrus facets. Vinification takes place with spontaneous fermentation half in fiberglass tanks and half in used oak barrels. Aging in the same containers on the fine lees for 9 months.
Service
It is recommended to taste it at a temperature of 8/10° in tulip goblets. Wine to drink immediately but left a few years in the cellar can give great emotions.
Pairing
Great with fish starters, light first courses, to try with an octopus on potato cream.

Noëlla Morantin's adventure in the world of winemaking began in 2001, after a meeting with a viticulture professor. An expert in marketing, she began working in 2004 for the Domaine Les Bois Lucas, in the Touraine area, in the heart of the Loire Valley and, later in 2008, for Didier Barrouillet, of Clos Roche Blanche. It is from him that her solo adventure begins, when, in 2009, she decides to rent 8.5 hectares of vineyards located in Pouille, a small town in the French region of the Loire. Here on a clayey soil and limestone rock, plants of Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Malbec and Gamay grow, which offer a sublime result. Even in the cellar its main value persists: it chooses to be free from chemicals and manipulations, with the aim of producing a wine that is as natural as possible, which leads it to obtain great results thanks to its perseverance, but above all thanks to its free choice to follow a pure passion.
